I've never had Brinjal biltong before so this was a different experience for me. My first thought as that I immediately liked it, but then a bit after I found it to be a little to 'chewy'.
It may just be an acquired taste and something I need to get used too.
Very much like the texture of biltong that I remember (it's been around 6 years now since I've had animal-based). I'm willing to try it again.
Pretty alright, man.
